Method


 

  1. Clean and cut the meat into 1½" cubes, wash and squeeze dry.
  2. Grind the onion and papaya, mix with ginger and garlic into the oil. Apply this to the meat cubes.
  3. Next, finely grind the coriander, cumin and poppy seeds, the pepper, cinnamon, cardamom, chillies and turmeric into a thick paste.
  4. Mix this with the curds, also thick and let the meat marinate in the mixture for at least 4 to 5 hours.
  5. Grease skewers and pack the meat cubes on them. Roast over a charcoal fire or under a hot grill.
  6. When the meat is nearly done, baste with a little lemon juice and melted ghee.
  7. When the meat is crusty and brown, sprinkle salt and serve hot.

 

 

Ingredients:                            


1 ½ kg. leg meat                                       
1 large onion
1 tsp. ground ginger
1 tsp. ground garlic
1½ green papaya
1½ cup oil
4 tbsp. sour curds                                     
2 tsp. coriander seeds
1 tsp. cumin seeds
2 tsp. poppy seeds
2" piece cinnamon
4 cardamoms
15 peppercorns
8 red chillies
1½ tsp. turmeric
2 tsp. salt
juice of 1 lemon
1½ cup ghee.
